My mom has always had a talent for epic sandwich fillings. This version of a grilled cheese crossed with a hot dog is something she used to make for me all the time as a child. When it popped back into my head the other day I was super excited to veganise it. It may sound a little out there but truly its so delicious and incredibley comforting!
4 large sweet and sour pickles
1 vegan hot dog sausage (I used tofurky)
1/4 cup vegan cheddar
1/4 cup vegan mayonnaise
1 TBSP pickle juice
pinch sweet paprika
4 slices of white sourdough bread
1. Grate the pickles, sausage and cheese. Combine in a bowl with the remaining ingredients.
2. Lightly toast the bread, divide the cheese mix between the four slices and place under the grill until the cheese is melted. ENJOY!
