strawberry & cardamon chia jam

There is nothing better than fresh strawberries and I love to take advantage them when they're in abundance at the beginning of summer. This simple jam is effortless and delicious on toast, pancakes and oatmeal.

Ingredients

500g fresh strawberries
zest of 1 orange
1 cup water
1/4 cup coconut sugar
4 cardamon pods (seeds removed and ground) 

2 TBSPs chia seeds

Method

1. Remove the tops from the strawberries and cut into quarters. Place the strawberries into a pot with the remaining ingredients except the chia seeds and simmer on a medium heat for 20 - 30mins.
2. Remove the jam from the heat, allow to cool and add the chia seeds. Place in a clean jar and store in the fridge.
