simple tomato relish

I like to make this tomato relish to serve with breakfast on the weekends. It's so delish with grilled vegan sausages and you can make it in the time it takes to get your sausages sizzling and pop down a couple rounds of toast. 


1/2 red onion (sliced)
vegetable oil for frying
1 tsp freshly ground black pepper
1/2 tsp salt
1 garlic clove (crushed)
1 TBSP coconut sugar
2 TBPs coconut aminos or tamari (if you use tamari you may need to add a little more coco sugar!)
1 TBSP balsamic vinegar
1 tin crushed tomatoes
1 TBSP liquid smoke (optional) 


1. In a small pot on medium heat with a splash of oil, salt and black pepper, fry the onions until caramelised. 
2. Add the garlic and coconut sugar and continue to fry for another minute.
3. Add the remaining ingredients and bring to boiling, turn down to a simmer and allow to cook until jammy in constancy. 
4. Sore in an airtight container in the fridge for up to two weeks.
