These guys are the classic vegan pancake mix that seems so popular at the moment but with one of your five a day and a little bit of spice. If you don't have a high speed blender sub the rolled oats for store bought oat flour and simply mix with a whisk to combine.
Makes 12 - 14 pancakes
2 1/3 cups rolled oats
2 very ripe medium bananas
2 cups dairy free milk
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
1 small carrot (finely grated)
vegan butter or coconut oil for cooking
high speed blender
1. Blend the rolled oats until fine and flour like in texture. Add the spices, salt and raising agents and pulse to combine.
2. Add the milk and bananas and blend until smooth and well combined.
3. Stir in the finely grated carrot with a spoon (do not blend).
4. Lightly grease a non-stick pan and place on medium heat. Pour your pancake mix straight from the blender into the pan, cooking 1 - 3 pancakes at a time depending on size of pan. Flip the pancakes when multiple bubble appear on top.
