passionfruit cheesecake smoothie

This smoothie is delicious but just like a raw vegan cheesecake it requires just a touch preparation. The oats and the cashew nuts need to soak in just enough water to fully submerge before they'll blend well (unless you have a high-speed blender, in which case you can get started straight away!). You can also swap out the passionfruit for your favourite berry, blend 1/2 cup of frozen strawberries, raspberries or blueberries with the mix instead of adding the passionfruit at the end.


1/2 cup non-dairy milk (I used almond) 
3 large frozen bananas
2 TBSPs oats (soaked for 4-6hrs)
1/4 cup cashew nuts (soaked for 4-6hrs)
1 tsp lemon juice
1 tsp lemon zest
1 tsp vanilla extract
1 tsp chia seeds
1/2 cup ice
2 medjool dates or 4-6 dried dates

4 medium passionfruits

Additional Equipment

standard or high-speed blender


1. Drain and rinse the cashew nuts well. Place all the ingredients in the blender (liquids in first for an easier blend) except the passionfruit.
2. Blend until fully combined and smooth, scoop out the passion fruit flesh (leave some aside to decorate if desired) and stir into the smoothie, do not blend.
3. Divide between two glasses and enjoy!
