peanut butter smoothie bowl with jammy berries

When I think of summer I think of smoothie bowls and I love how decadent they can be while still being incredibly nourishing. Their beauty is in their infinite possibilities so never feel confined by recipe . . . 


for the smoothie bowl

1 TBSP cacao powder
1 TBSP peanut butter
2 frozen bananas cut into pieces (slightly thawed if you're not using a high speed blender)
1/2 tsp vanilla
pinch of salt


1 tsp of hemp seeds
1 tsp of chia seeds


half a banana fried on high heat for 1 minute in a non stick pan
1/2 cup of mixed frozen berries fully defrosted
1 handful of fresh blueberries
1 TBSP cacao nibs
1 TBSP roasted peanuts
large scoop of coconut yoghurt


1. Blend all the smoothie bowl ingredients until smooth but still icy so it's thick like ice cream. Try to avoid adding any liquid but if it's not blending at all you can 1 TBSP of non-dairy milk or cold water at a time until the desired texture is achieved. If the mixture is too runny add a small handful of ice. 
2. Pour into a bowl and finish with above toppings or those of your choice. The fried banana adds an interesting contrast of warm with cold but you can skip this and use a fresh banana.
