As much as I wish I could, I can't take credit for this recipe. Adam and I went on a little trip near the Yarra Valley and our airbnb host made us this delicious semolina porridge for breakfast. It's creamy and warm but the lemon makes it light and fresh. I always struggle to resist adjusting recipes but this one is perfect as it is, best made by Mon but incredibly easy to make in your home if you can't make it to her airbnb.
2.5 cups non-dairy milk
1/2 cup coconut sugar
1 tsp vanilla extract
1 lemon juice and zest
1/2 cup semolina
1. Add all the ingredients to a saucepan, except the semolina, and bring to a simmer on medium heat.
2. Add the semolina and whisk into the liquid. Continue to whisk until all the liquid is fully absorbed, allow to cook on a low heat for another 10mins stirring regularly. Serve immediately with a little bit of extra milk and lemon zest.
