zesty acai bowls

If anything is overdone in the Instagram community it's smoothie bowls . . . but alas despite their cliched and constant appearance my love for a real good acai bowl cannot be denied. I added a little twist to these guys and included the zest of a lemon which makes them incredibly refreshing and the perfect start to a hot summers day (yes it's almost summer down under!).

Serves 2


1/2 cup almond milk plus extra as required
zest and juice of 1 large lemon
1 cup frozen blueberries
1 sachet of acai puree (100g approx.)
3 medium frozen bananas (roughly chopped)
1 TBSP chia seeds

Your choice of fresh fruit, granola and coconut yoghurt for topping

1. Add the almond milk and half the lemon juice to the blender. Remove the plastic from your sachet of acai and carefully cut into four pieces (this will make it easier to blend). Roughly chop your frozen bananas and add to the blender with the acai and remaining ingredients.
2. Blend until smooth. If you struggle to get the mixture to blend add 1 TBSP, of additional almond milk, at a time until the mixture starts to move smoothly in the blender however you want the mixture to be as thick as possible so avoid adding too much extra liquid. 
3. Divide the mix into two bowls and finish with your desired toppings.
