200g dark chocolate melted or make you own
1 cup of puffed quinoa
1/2 cup of coconut chips
1/2 cup almonds roughly chopped
1/4 cup dried raspberries
1/4 cup sultanas
Mini muffin tray greased or mini muffin paper cups
1. Preheat the oven to 180C/350F. Toast the almonds, coconut flakes and puffed quinoa for 10mins in the oven. Stir the mix half way through
2. Stir in the quinoa mix and dried fruit until well combined
3. Scoop spoonfuls in to the muffin tray or cups and press gently to shape.
4. Place in the freezer for a two or three minutes until the mixture has set (if using paper cups place on a baking tray for easy transportation). Repeat until you have shaped all the mix.
