Maybe I'm being naive but I think if you make homemade pizza bases it's bound to be good regardless of the recipe. The word homemade before any kind of dough is almost always an automatic qualifier for deliciousness. For this reason and because I don't make pizza often enough to have a solid go-to recipe, I briefly consult google, I find the simplest recipe and the dough production commences. The real challenge is what to put on a pizza when pepperoni and mozzarella are no longer options . . . Well we have ideas, some seriously tasty ones!

Basic Components

Tomato Sauce

1 can of diced tomatoes (preferably organic with no other added ingredients) 
2 cloves of garlic
1 TBSP olive oil
1 date or 1 tsp date paste (optional)
1/2 tsp salt
couple of grinds of black pepper

Place all ingredients in a food processor and blend until smooth. Adjust seasoning if necessary.

Cashew Cheese

1 cup of raw cashew nuts soaked in cold water for 2-4hrs
1-2 TBSPs water
1 tsp dijon mustard
1 tsp nutritional yeast
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp white wine vinegar
1 tsp salt
couple of grinds of black pepper

Drain and rinse the cashew nuts well. Blend in a food processor with the water until smooth (5mins approx.), add remaining ingredients, adjust the seasoning if necessary and store in the fridge to set.

Pizza Toppings

Classic Veg

2 TBSPs of a tomato sauce
2-3 thinly sliced button mushrooms
half a red capsicum thinly sliced
handful of kalamata olives pitted and chopped
1 spring onion thinly sliced in diagonal rounds
1 zucchini cut in half length ways and then into slices
1/2 tsp of oregano
1 garlic clove finely chopped
salt, pepper and a drizzle of olive oil

10 dollops of cashew cheese, add this in the last few minutes before you take the pizza out the oven.

Pizza con Potate with Rosemary and Caramelised Onions

1 red onion chopped in half and then into slices
1 tsp coconut oil
1 TBSP balsamic vinegar
1 tsp tamari
1 TBSP date paste or maple
salt and pepper to taste

Fry onions over medium heat in oil, when translucent add the remaining ingredients. Continue to cook for approx. 5mins or until the liquid from the vinegar and tamari has evaporated. Season to taste.

1 TBSP olive oil
1 clove of garlic
3 baby potatoes par boiled and very thinly sliced
1-2 tsps of fresh rosemary finely chopped
salt and pepper to taste 

Drizzle your pizza base with olive oil, place the potato slices over the base evenly, coat generously with olive oil (add more if needed), sprinkle with rosemary, garlic, caramelised onions, salt and pepper. Bake until potato is crispy

Marinara

2 TBSPs tomato sauce
1-2 garlic cloves thinly sliced or crushed
1 TBSP of olive oil (a good quality organic extra virgin will work best with this base)
salt and freshly ground black pepper to taste

Handful of fresh basil leaves, add these in the last few minutes before you take the pizza out the oven otherwise they will burn.

Pesto, Peppery Greens and Wild Mushroom

2 TBSPs of vegan pesto (check out our rough guide here)

Spread evenly over your base. 

4-6 oyster mushrooms roughly chopped
1 TBSP truffle oil
Salt and pepper to tast 

Add the mushrooms and coat with truffle oil, salt and pepper.

1-2 handfuls of rocket add these in the last few minutes before you take the pizza out the oven.
