Dates are my favourite source of sweetness and I very rarely use anything else. Soaking the dates and blitzing them up makes them far more versatile. You can also save the water you use to soak the dates in, boil it down with an additional TBSP or two of date paste until you a syrupy consistency and pass through a sieve for an easy sugar free caramel. 

Ingredients

2 cups of dates
water as required 

Additional Equipment

Food processor or a high speed blender 

Method

1. Place the dates in a bowl and cover with enough water to fully submerge. Soak for 1 hour. Drain and rinse well (don't forget to save the water if you intend to make a caramel).

2. Chuck in the food processor and blend until smooth, scraping down the sides occasionally to get an even blend

Store in an airtight container in the fridge or freeze. It will last 1-2 weeks in the fridge.
