spiced oatmeal & raisin cookies

Ingredients 

For the wet mix

1/3 cup tahini
1/2 cup olive oil
1/2 cup date paste
1 TBSP honey (optional)
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp cardamon
1 tsp vanilla

For the dry mix

1.5 cup of spelt flour
1/2 tsp salt
1 tsp baking powder
1/2 cup of oats
1/2 cup sultanas

1 chia egg

Method

1. Pre-heat the oven to 180C/350F. Make the chia egg, combine 3 TBSPs of water with 1 TBSP of chia seeds and set aside.

2. Place the wet mix ingredients in a small pot and combine over a gentle heat. Do not let the oil fry. Once well combined remove from the heat.

3. Sieve flour, baking powder and salt into a large bowl, stir in the oats and sultanas.

3. Make a small well in the centre of the dry mix and add the wet mixture with the chia egg. Mix until well combine.

4. Shape the mixture into firmly packed palm sized balls and place onto a grease proof baking tray. Bake for 15-20mins.

Alterations: the spelt flour can easily be replaced with that of your choosing. Don't like spices? Leave them out! No tahini? Use peanut butter.
