1 cup of plain flour
1 tsp baking powder
pinch of salt
1/2 chia eggs
1 TBSP coconut oil plus a extra for frying
1 tsp vanilla essence
1 cup of coconut milk
1. Make the chia egg, combine 1/2 TBSP of chia seeds with 1.5 TBSPs of water
2. Sieve the dry ingredients into a large bowl make a small well in the centre and whisk in the remaining ingredients
3. Melt enough coconut oil to lightly cover the base of a large pan, spoon the mixture into even circular rounds and flip once they start to bubble.
5. Serve hot in large stacks with quick fried apple rounds, a dusting of rosemary toasted coconut, a generous drizzle of date caramel and dairy free yoghurt.
