Veg style burgers are one of my all time favourite meals and they can be so incredibly versatile. We don't have a go to recipe for perfect patties but that's part of what makes vegan burgers so awesome; you can throw them together with a few pantry staples and have a truly epic meal!
Step 1 - veg out!
Start where all good meals begin; finely dice an onion and fry on a medium heat with salt and freshly ground black pepper. Add a couple of cloves of chopped garlic and a few handfuls of veg. Whatever you have knocking around will suffice.
Some combinations we like include grated zucchini and roughly chopped broccoli, the classic grated carrot and beetroot or roasted butternut squash and red capsicum.
Step 2 - bulk out!
To your veg add a few tins of well rinsed chickpeas, black beans or brown lentils. A cup of toasted nuts won't go a miss either. Nuts will diversify the texture and add a rich flavour. I really love adding walnuts to burgers that are mushroom dense, cashew nuts have an amazing creaminess that will work with any combination and peanuts will incur additional flavour if you're going for a satay style burger. Finely chop or pulse your nuts before adding to the mix.
Cook the mix on a medium heat until your chosen legumes begin to disintegrate slightly, lightly mash with a fork or masher and remove from the heat.
Step 3 - bring it all together.
Place the mix in a large bowl and add 1 chia egg (1 TBSP chia seeds mixed with 3 TBSPs of water), 1 flaxseed egg (1 TBSP of ground flax mixed with 3 TBSPs of water) or 1 cup of bread crumbs to help bind the mixture. If the mix looks too dry add a TBSP or so of olive oil.
Step 4 - Shape the mix into patties using your hands, making sure they are firmly packed. Fry on both sides over medium heat until golden brown. Enjoy!
